Pre-heat oven to 190° C / 170°C fan / gas 5.
TOP TIP: Use a shelf in the middle of the oven without anything above it.
TOP TIP: Season your chicken all over and rub with butter.
Cooking: Place chicken in pre-heated oven & leave undisturbed for approximately 1 hour and 20 minutes.
TOP TIP: To check your chicken is cooked, pierce the thigh with a skewer. If the juices run clear, it is done.
TOP TIP: Remove the chicken from the roasting pan and leave to rest for 15-20 minutes.
