Venison Saddle

A cut with a reputation that says party time: In fact it’s several cuts in one.



A true chef and butcher collaboration, we are very excited to announce this new centrepiece. Two loins are carefully removed from the saddle then stuffed with our own apricot stuffing and scented with spices. This is then wrapped first in air dried ham and caul fat to lock in moisture when roasting. Cook pink and carve at the table. Each slice contains nuggets of warm aromatic fruits for a memorable feasting centrepiece.
